Orange Lentil Soup


1 onion diced
1 clove garlic minced
1 1/3 cups lentils
3/4 cups orange juice (plus a dash)
2 carrots chopped
1 bay leaf
1/4 tsp thyme
4 cups broth
1/2 cup water

Simmer onions and garlic in olive oil at bottom of pan.
Then add all other ingredients.
Simmer 40 minutes

I made this tonight - two lentil haters didn't like it, one lentil hater was neutral, one lentil hater was slightly more positive than neutral, and one lentil liker (me ... big surprise) really liked it. So, knowing it wasn't going to be a big hit in the first place, I'm satisfied with the response and will make it again. :)
